Buttered Green Beans

INGREDIENTS:
1 lb green beans 2 tablespoons butter salt and pepper
chopped parsley (for garnish)



1 If beans are small, wash them, snip off the ends and leave them whole. If they are large, cut in two or three or 'French' them by cutting in fine, diagonal slices. If at all limp, soak them in iced water for 1 hour before cutting and cooking.
2 Bring a large pan of salted water to a boil, add the beans and boil uncovered over high heat for 15 minutes or until tender. Drain and run under cold water to set the color. Melt the butter in the saucepan, add the beans and toss over the heat until they are very hot and coated with butter. Add pepper to taste and sprinkle with chopped parsley before serving. The beans may be boiled up to an hour in advance and reheated to serve in the butter.
