Wichita Mountains Chicken Macaroni

INGREDIENTS:
1 5-lb chicken 1 bay leaf 1 onion
celery tops salt and pepper to taste 1 cup butter or chicken fat
3/4 cup flour 5 cups chicken broth 1 cup milk
1 cup finely cut celery 1 can mushrooms 1 can tomato puree
1 can pimentos 2 cloves of garlic 2/3 lb macaroni, cooked
1/2 cup grated Parmesan cheese



1 Simmer chicken slowly with bay leaf, onion, celery tops, salt and pepper until chicken is tender. Remove meat from bones; cut into 1-in. squarers. Melt butter; add flour. Add broth and milk slowly; cook until thick. Add celery, mushrooms, tomato puree, pimentos and garlic; let cook. Add chicken to sauce; let stand for at least 1 hour. Add macaroni to chicken mixture; pour into baking dish. Cover with cheese. Bake in 350 F. oven for 45 minutes.
