| INGREDIENTS: | ||
| 1 5-lb chicken | 1 bay leaf | 1 onion |
| celery tops | salt and pepper to taste | 1 cup butter or chicken fat |
| 3/4 cup flour | 5 cups chicken broth | 1 cup milk |
| 1 cup finely cut celery | 1 can mushrooms | 1 can tomato puree |
| 1 can pimentos | 2 cloves of garlic | 2/3 lb macaroni, cooked |
| 1/2 cup grated Parmesan cheese | ||
| 1 | Simmer chicken slowly with bay leaf, onion, celery tops, salt and pepper until chicken is tender. Remove meat from bones; cut into 1-in. squarers. Melt butter; add flour. Add broth and milk slowly; cook until thick. Add celery, mushrooms, tomato puree, pimentos and garlic; let cook. Add chicken to sauce; let stand for at least 1 hour. Add macaroni to chicken mixture; pour into baking dish. Cover with cheese. Bake in 350 F. oven for 45 minutes. |
