Fort Gibson Cheese Popovers

INGREDIENTS:
1 cup flour 1/2 tsp salt 1 tsp sugar, optional
1 cup milk 1/2 cup (2-oz) grated American cheese 2 eggs, beaten
1 tbsp melted butter



1 Start oven 10 minutes before baking; set to hot (475 F.) Grease liberally deep muffin pan with cups holding 1/3 cup. Sift flour, measure, add salt and sugar and resift into mixing bowl. Place prepared pans in oven to heat 3 or 4 minutes. Combine milk, eggs and butter, add to flour mixture and beat thoroughly with rotary beater a minute or two. Fill hot muffin pan cups 1/4 full, sprinkle 1 tsp grated cheese over batter and then add remaining batter and top with rest of cheese. Bake 12 minutes, then reduce heat to moderate (350 F.) and bake 15 minutes longer. Two or three minutes before end of baking time, quickly pierce popovers with sharp stell skewer. Finish baking. Serving immediately on a hot plate.
