Turtle Ragout

INGREDIENTS:
1 onion, chopped 2 tbsp butter or margarine 1 tbsp flour
2 lbs turtle meat, diced 1 cup water 1/4 cup sherry
1 clove garlic, minced



1 Saute onion in butter or margarine until tender. Blend in flour. Add remaining ingredients and simmer for 30 minutes.
