| INGREDIENTS: | ||
| 4 medium-sized tomatoes | 1/2 unpared cucumber, thinly sliced | 1 cup dairy sour cream |
| 1/2 tsp salt | dash of pepper | |
| 1 | Slice off the top of each tomato. Scoop 1 tbsp pulp from each tomato. Cut each cucumber slice into fourths. Combine with sour cream and seasonings. Spoon some of sour cream mixture into each tomato. Serve as garnish around beef roast. |
