| INGREDIENTS: | ||
| 3 cups cooked rice | 1 large can chunk style tuna | 2 hard boiled eggs, chopped |
| 1/4 cup lemon juice and rind of one lemon, grated | 1 lb fresh tomatoes, chopped | 1/2 tsp salt |
| 1/8 tsp pepper | 3/4 cup French dressing | 1/2 cup chopped peanuts |
| 1 | In a large bowl, place rice, tuna, chopped eggs, tomatoes, lemon juice and rind, salt, and pepper. Pour on French dressing, toss thoroughly but gently. Add chopped peanuts just before serving. |
