Mt. Scott Peanut Seafood Salad

INGREDIENTS:
3 cups cooked rice 1 large can chunk style tuna 2 hard boiled eggs, chopped
1/4 cup lemon juice and rind of one lemon, grated 1 lb fresh tomatoes, chopped 1/2 tsp salt
1/8 tsp pepper 3/4 cup French dressing 1/2 cup chopped peanuts



1 In a large bowl, place rice, tuna, chopped eggs, tomatoes, lemon juice and rind, salt, and pepper. Pour on French dressing, toss thoroughly but gently. Add chopped peanuts just before serving.
