Pueblo Carrot Hash

INGREDIENTS:
2 pounds of carrots 1/2 cup of butter or margarine 1 tablespoon of dark brown sugar
1/2 cup of orange juice salt to taste



1 Wash and grate the carrots.
2 Melt the butter in a large skillet and add the carrots and sugar.
3 Cover and cook over medium heat for 10 minutes.
4 Add the orange juice and cook for an additional 5 minutes, or until the carrots are cooked but crunchy.
5 Season with salt.
