Turner Falls Gingerbread Cookies

INGREDIENTS:
1 cup (2 sticks) butter 1 cup light brown sugar, firmly packed 1/2 cup light molasses
1 tbsp ginger 2 tsp cinnamon 1 tsp baking soda
3-1/2 cups flour



1 Preheat oven to 350 F. In mixing bowl cream butter; gradually add sugar and beat until light and fluffy. Blend in molasses. Sift together flour, ginger, cinnamon and soda; gradually add to creamed mixture. Chill dough for ease in handling. On lightly floured surface roll dough to about 1/8-in thickness. With floured cookie cutters cut into desired shapes. With wide spatula transfer to buttered baking sheet; bake 10-18 minutes. Let stand a few minutes before removing to wire rack to cool.
