Chandler Stuffed Mushrooms

1-1/2 cup stuffing


INGREDIENTS:
2 tbsp butter softened 1 tbsp blue cheese 14 to 16 fresh mushroom caps, 1-in diameter
1 tsp lemon juice 1 cup soft bread crumbs (2 slices white bread, cut or torn into small pieces)



1 Blend butter, cheese, and lemon juice in a small bowl. Stir in bread crumbs until they are moistened. Spoon about 1 tsp stuffing into each mushroom cap. Pair mushroom caps according to size (stuffing will hold them together). Place mushroom pairs on metal skewers, and brush with melted butter. Broil about 2-1/2 minutes. Turn and continue broiling an additional 2 to 2-1/2 minutes.
