| 4 partridge, cut into pieces | salt and pepper to toast | 1/4 cup lemon juice |
| 1/3 cup oil | 1 clove garlic, minced | 1 tsp parsley flakes |
| 2 tsp oregano | ||
| 1 | Sprinkle partridge pieces with salt and pepper. In a bowl, mix lemon juice, oil, garlic, parsley and oregano. Dip each piece of meat in mixture and place on a broiler pan. Broil 15 to 20 minutes on each side. Baste occasionally with lemon-oil mixture. |
