Lemon-Flavored Partridge

INGREDIENTS:
4 partridge, cut into pieces salt and pepper to toast 1/4 cup lemon juice
1/3 cup oil 1 clove garlic, minced 1 tsp parsley flakes
2 tsp oregano



1 Sprinkle partridge pieces with salt and pepper. In a bowl, mix lemon juice, oil, garlic, parsley and oregano. Dip each piece of meat in mixture and place on a broiler pan. Broil 15 to 20 minutes on each side. Baste occasionally with lemon-oil mixture.
