| INGREDIENTS: | ||
| 1 cup cut okra | 1 medium onion, chopped | 1 green pepper, chopped |
| 1/4 cup salad oil for 2 tbsp butter or substitute | 1 lb ground beef (optional) | 1 tsp flour |
| 3 tomatoes, peeled and quartered | 1 medium zucchini or yellow summer squash | 1 tbsp sugar |
| 1/2 tsp salt | 1/2 tsp pepper | |
| 1 | Cook okra in boiling, salted water for 10 minutes; drain. Brown onion and green pepper in salt oil in large frying pan; brown beef also, if used. Add tomatoes; cook slowly for 5 minutes. Toss okra in flour; add to ground beef mixture. Add remaining ingredients; cook over low heat until vegetables are just tender, stirring as little as possible. One cup canned tomatoes may be used in place of fresh tomatoes. Recipe will serve six if beef is used. |
