Remove leaves from head of cabbage carefully; place in large pot. Cover with boiling water; simmer for 5 minutes. Drain cabbage; cool. Combine ground round, matzo meal, rice, egg, salt, portion of onion and catsup; mix well. Place large portion of meat mixture in center of each cabbage leaf. Fold in sides; roll up. Place in large saucepan with open side down. Combine remaining onion, lemon juice, sugar, raisins, cinnamon, water and tomato sauce; pour over meat. Cover; simmer for 1-1/2 hours, basting occasionally. Add other seasonings to meat mixture, to taste. |
