| 2 beef kidneys | 1 onion | 1 hot pepper |

| 1 | Cut kidneys in pieces and wash thoroughly. Pre-cook, bring to a boil and drain off the water. Cover with fresh water, add 2 tsp salt and cook 2 hours or until tender. Add the onion, and pepper when the kidney is half done. |
