Pinto Beans and Hominy

INGREDIENTS:
3 cups dried pinto beans 10 cups water 1 tablespoon salt
1/2 cup diced salt pork 3 cups hominy



1 Wash and sort beans, and put them into a cooking pot.
2 Stir in water, salt, and diced salt pork.
3 Cover and simmer slowly for two hours, until beans are almost tender.
4 Rinse partially cooked hominy to remove ash and add to beans.
5 Simmer, covered, for another hour, or until beans and hominy are well done.
6 Serve as a main dish, with a side dish of chile or native greens and tortillas or fried bread. Or serve as vegetable with another main dish.
