Pinto Beans and Hominy |

| INGREDIENTS: | ||
| 3 cups dried pinto beans | 10 cups water | 1 tablespoon salt |
| 1/2 cup diced salt pork | 3 cups hominy | |
| 1 | Wash and sort beans, and put them into a cooking pot. |
| 2 | Stir in water, salt, and diced salt pork. |
| 3 | Cover and simmer slowly for two hours, until beans are almost tender. |
| 4 | Rinse partially cooked hominy to remove ash and add to beans. |
| 5 | Simmer, covered, for another hour, or until beans and hominy are well done. |
| 6 | Serve as a main dish, with a side dish of chile or native greens and tortillas or fried bread. Or serve as vegetable with another main dish. |
