Wash and sort beans, and put into a cooking pot. |

Shell corn, wash it, and add to the beans. |

Add water, salt pork or ham, and salt. |

Cover and simmer three hours, or until beans and corn are tender, stirring occasionally and adding hot water as needed. |

This recipe can also be cooked in a pressure cooker. Cook at fifteen pounds presure for fifty minutes, then remove from heat until mixture cools and pressure is reduced. Remove lid and return beans to heat, to simmer for fifteen minutes. This removes the pressure cooked flavor, which some people find objectionable. |

The Spaniards introduced fruit, wheat, sheep, and pork to the Hopis. Pork products are used to season many dishes-either as salt pork, a slice of ham, or ham bone. Althrough a few pigs are raised on the reservation, most Hopi housewives get their meat products at local supermarkets. |
