Cheese Croquettes (Hancock Shaker Village)

INGREDIENTS:
3 tablespoons butter 1/3 cup flour 1 cup milk
1/2 teaspoon salt 1/4 teaspoon pepper 2 egg yolks
2 tablespoons heavy cream 2 cups small pieces soft mild cheese (American Cheddar "store cheese" or Cheshire) 1 egg, beaten
bread crumbs deep fat for frying



1 Melt butter, add flour, cook 2 minutes and add milk while stirring. Season. Bring to boiling point and add yolks beaten with cream. Add cheese and cook at low heat only long enough to melt cheese. Remove from fire, spread on plate, and cool. Shape, dip in crumbs, beaten egg, and crumbs. Fry in deep fat and drain.
