Hopi Dried String Beans

INGREDIENTS:
1 string of dried string beans (approximately 1 pound) 3 quarts water 1/4 pound cubed salt pork
1 tablespoon salt



1 Wash beans to remove dust.
2 Soak beans for thirty minutes in 3 quarts of water.
3 Add salt and salt pork to beans and simmer for three hours, or until beans are tender.
4 Stir occasionally and add hot water as needed.
5 This recipe adds variety to the Hopi diet and is quite tasty. The mature bean pods are cooked and served whole and are eaten with the fingers. When you put a bean into your mouth, you hold onto the end of the pod and draw the bean forward between your teeth to remove the string. The strings are then deposited on the rim of the plate.
