Lima Beans with Pork

INGREDIENTS:
2 cups dried lima beans water, to cover 3/4 pound salt pork
1-1/4 cups tomato juice 1 small onion, chopped 1/8 teaspoon chile powder



1 Wash and sort beans, cover with water, and soak for several hours or overnight.
2 Add salt pork to the beans, and cover and simmer in the same water until beans are tender.
3 Add tomato juice, onion, garlic, and chile powder and continue cooking until beans are very tender and broth is thick.
4 While cooking, stir beans occasionally and add hot water as needed.
5 Lima beans are not an everyday bean but are cooked when the homemaker craves them or to give variety to the diet. They can be served as a main dish or as a vegetable.
