Hominy and Eggs

INGREDIENTS:
2 cups drained, cooked hominy 4 well-beaten eggs 1 tablespoon shortening
seasonings, as desired



1 Melt shortening in a skillet.
2 Brown hominy in the shortening over medium heat.
3 Stir beaten eggs into hominy and add seasonings.
4 Cook until eggs are set and ready to serve, stirring constantly to prevent scorching.
