| INGREDIENTS: | ||
| 2 large avocados | 1 large tomato diced | 1 Tbsp lemon juice |
| 1 fresh green onion chopped fine | 1 Tbsp chopped canned green chilli | 1/4 tsp red chilli powder |
| 1/8 tsp garlic salt | SALAD DRESSING: 1/2 cup salad oil | 5 Tbsp white vinegar |
| 1 tsp salt | 1/2 tsp dry mustard | 1 tsp paprika |
| a pinch of mint | ||
| 1 | Peel the avocados and mash the pulp in a bowl. Add tomatoes, lemon juice, green chilli, and garlic salt. Let set 30 minutes. |
| 2 | Mash all into a smooth paste. Serve on fresh lettuce, sprinkle lightly with the red chilli powder. Serve toastadoes with the salad. |
| 3 | SALAD DRESSING: Mix in a cup or small bottle. When making Guacamole Salad soak the diced avocado about an hour in the dressing. Pour over lettuce in the Guacamole Salad. For a less sharp dressing add 1/2 tsp brown sugar. |
