Guacamole Salad

INGREDIENTS:
2 large avocados 1 large tomato diced 1 Tbsp lemon juice
1 fresh green onion chopped fine 1 Tbsp chopped canned green chilli 1/4 tsp red chilli powder
1/8 tsp garlic salt SALAD DRESSING: 1/2 cup salad oil 5 Tbsp white vinegar
1 tsp salt 1/2 tsp dry mustard 1 tsp paprika
a pinch of mint



1 Peel the avocados and mash the pulp in a bowl. Add tomatoes, lemon juice, green chilli, and garlic salt. Let set 30 minutes.
2 Mash all into a smooth paste. Serve on fresh lettuce, sprinkle lightly with the red chilli powder. Serve toastadoes with the salad.
3 SALAD DRESSING: Mix in a cup or small bottle. When making Guacamole Salad soak the diced avocado about an hour in the dressing. Pour over lettuce in the Guacamole Salad. For a less sharp dressing add 1/2 tsp brown sugar.
