Chilli Sauce Antigua

INGREDIENTS:
24 large green chilli pods 2 qts water 1/2 lb suet chopped
1 tsp salt 1 medium garlic clove 1/2 tsp oregano
1/2 tsp cominos



1 Wash chilli peppers and remove the seeds. Boil in the salted water until tender.
2 In the meantime, fry the chopped suet with the chopped garlic clove. Pour off the grease and keep. Discard the leftover suet and garlic clove.
3 Press the cooked chilli peppers through a colander; add the rendered suet grease and all other ingredients.
4 Cook over a low fire for 15 minutes. It should have the consistency of thin catsup.
