Mixed Seafood Casserole

INGREDIENTS:
3 cups fresh bread cubes (3 medium slices bread) 2 cups mixed seafood or 2 cans (7-oz) tuna, shrimp or crab 1 cup chopped onion
1 cup chopped celery 1/2 cup mayonnaise 2 eggs
1 cup (10-oz) condensed cream of mushroom soup 1 cup (4-oz) shredded cheddar cheese paprika



1 In 12x8x2-in dish place bread cubes. Microwave at high 4 to 5 minutes, stirring every 2 minutes, until crisp. Remove about half of cubes and save for top layer.
2 In large mixing bowl mix together seafood, onion, celery and mayonnaise. Spread over bread cubes in dish. Cover seafood mixture with remaining half of bread cubes.
3 In small bowl beat eggs well and mix in milk and soup. Pour over casserole. Microwave at medium high 28 to 32 minutes, rotating dish 1/2 turn after 15 minutes, until set but still slightly soft in center.
4 Sprinle top with cheese, then paprika. Microwave at medium high 1 to 2 minutes, until cheese is melted. Let stand 5 to 10 minutes before serving.
