Blue Cornmeal and Flour Griddle Cakes

12 3-inch cakes


INGREDIENTS:
1/2 cup finely ground blue cornmeal 1/2 cup all-purpose flour 1/4 cup dry milk
1 tablespoon baking powder 2 tablespoons shortening 1 cup warm water



1 Combine dry ingredients and stir.
2 Melt shortening in water and add to dry ingredients, beating well.
3 Drop by spoonfuls onto a lightly greased, hot griddle and cook until golden brown on both sides. Turn once.
