Cranberry-Orange Bread

INGREDIENTS:
2 cups all-purpose flour 1 cup coarsely chopped fresh cranberries 3/4 cup sugar
1/2 cup coarsely chopped pecans or walnuts 2 teaspoons baking powder 1/4 teaspoon salt
1 egg 1 teaspoon grated orange zest (peel) 1/2 cup orange juice
1/2 cup vegetable oil



1 Preheat the oven to 350 degrees. Grease and flour a 9x5-inch loaf pan.
2 In a large bowl, mix together the flour, cranberries, sugar, nuts, baking powder, and salt.
3 In a small bowl, mix together the egg, orange zest, orange juice, and oil. Stir the wet ingredients into the dry ingredients and mix until just blended.
4 Pour the batter into the prepared pan and bake for 60 minutes, or until a toothpick inserted into the center of the loaf comes out clean. Cool the loaf for 15 minutes before removing it from the pan. Finish cooling the loaf on a wire rack.
