Zuni Bread

INGREDIENTS:
1 pkg yeast 1/4 cup warm water 1/4 cup molasses
2 tsp salt 2 cups corn meal 1-3/4 cups hot water
4-1/2 cups sifted flour Dissolve yeast in 1/4 cup warm water. Measure into mixing bowl: 1/4 cup molasses 1/4 cup shortening
2 tsp salt 2 cups corn meal Add 1-3/4 cups of hot water and stir until blended



1 Stir in two cups flour and mix until batter is elastic. (Beat 100 strokes)
2 Add yeast that has been dissolved to water. Then stir in 2-1/2 cups flour. Knead two minutes. Shape and place in greased bowl and cover.
3 Let rise double its bulk-approximately 1-1/2 hours. Punch down and let rise again until double its bulk.
4 Shape into either 1 large loaf or two small loaves. Place in greased pan and let rise again.
5 Bake at 400 degrees for 35 to 40 minutes.
