| INGREDIENTS: | ||
| 1 pkg yeast | 1/4 cup warm water | 1/4 cup molasses |
| 2 tsp salt | 2 cups corn meal | 1-3/4 cups hot water |
| 4-1/2 cups sifted flour | Dissolve yeast in 1/4 cup warm water. Measure into mixing bowl: 1/4 cup molasses | 1/4 cup shortening |
| 2 tsp salt | 2 cups corn meal | Add 1-3/4 cups of hot water and stir until blended |
| 1 | Stir in two cups flour and mix until batter is elastic. (Beat 100 strokes) |
| 2 | Add yeast that has been dissolved to water. Then stir in 2-1/2 cups flour. Knead two minutes. Shape and place in greased bowl and cover. |
| 3 | Let rise double its bulk-approximately 1-1/2 hours. Punch down and let rise again until double its bulk. |
| 4 | Shape into either 1 large loaf or two small loaves. Place in greased pan and let rise again. |
| 5 | Bake at 400 degrees for 35 to 40 minutes. |
