Pinon Cakes

INGREDIENTS:
1-1/2 cups whole wheat flour 1/2 cup pinon nuts, ground to meal 2 teaspoons baking powder
3/4 teaspoon salt (or to taste) 2 tablespoons sugar 2 teaspoons lard, butter or margarine
1/2-1 cup water



1 Sift flour, salt and baking powder. Add shortening and mix thoroughly. Add water a bit at a time to make medium dough.
2 Knead dough for 5 minutes. Cover and let stand. Pinch off dough to make egg-sized balls and roll to round cakes about 1/8" thick. Bake in 350 degree oven or cook on stove-top griddle. Use as hot bread or serve with honey.
