| INGREDIENTS: | ||
| 2-3/4 cups all-purpose flour | 1 package dry yeast | 2 cups warm water |
| 1 tablespoon sugar | 2 teaspoons salt | 2 cups white cornmeal (masa harina) |
| 1 | Mix flour and yeast. Mix water, sugar and salt and add to flour. Stir well, then beat vigorously for 3 minutes. |
| 2 | Stir in cornmeal and enough flour to make a stiff dough. Knead 3 to 5 minutes. Form into a ball, let rise in covered greased bowl for one hour. Punch down, let rest 10 minutes. Shape into two round loaves, and put into two greased round pans or casseroles and let rise 30-45 minutes. Bake at 375 degrees for 30 minutes, remove from pans and cool on rack. |
