Broccoli in Oyster Sauce

INGREDIENTS:
500g/1 lb/2 cups broccoli, tough stems removed and broken into florets 40g/1-1/2oz/3 tbsp butter or 2 tbsp vegetable oil 2 tbsp oyster sauce
2 tbsp Shaoxing (rice) wine



1 Bring a pan of water to the boil. Add the broccoli and simmer until it just begins to soften. Do not let it go soft. Drain and leave to dry.
2 Heat the butter or oil in a wok. When hot, add the broccoli and oyster sauce and turn together for 1 minute. Sprinkle on the wine and turn together until the liquid has reduced.
