Tacos

INGREDIENTS:
1 lb brisket meat 1 tsp garlic powder 2 tsp oregano
1 small onion diced 1 Tbsp parsley 1/2 tsp dry mint leaves
2 cups cooked potatoes fresh leaf lettuce THE MORE MODERN FILLING (FOR 8 TACOS): 1 lb coarsely ground pork or beef
1 small onion diced 2 fresh tomatoes diced 1 tsp garlic powder
1 small head lettuce finely chopped 2 cups grated cheese 2 tsp oregano
1 cup chilli sauce



1 Boil the brisket, then grind in a food mill. Dice the potatoes very small, add the seasoning, and mash all together. Cook until a thick mixture. Salt to taste.
2 Cook corn tortillas in hot (400 degrees) shortening and fold over.
3 Put leaf lettuce in the taco and spoon in the meat-potato mixture, diced onions. If you desire, add cooked chilli sauce.
4 THE MORE MODERN FILLING: Cook tortillas in hot (400 degrees) shortening and fold over. Fry meat with garlic and oregano. Spoon in meat mixture, diced onions, lettuce, tomatoes, and chilli sauce. Sprinkle grated cheese over all. Serve hot.
