INGREDIENTS:
4 slices bacon 1/8 cup diced onion 1/8 cup sweet green peppers
2 cups tomato juice 1 tsp salt 1/4 tsp black pepper
3 cups rice cooked only until just soft



1 Fry bacon crisp and break into small pieces. Fry onions and sweet green pepper. Add tomato juice, salt, pepper and bacon. Mix in rice and bake uncovered 30 minutes at 350 degrees. Serve with grated cheese, if desired.
