Pavo Relleno (Stuffed Turkey)

INGREDIENTS:
1 turkey (15 lbs) 1 cup butter or oleo 1 lb cooked ground beef
2 cups raisins 1/2 cup Pinon nutmeats 2 squares unsweetened cooking chocolate
1 tsp coriander seeds 1 tsp cinnamon 2 cups bread crumbs
1/4 tsp cloves hot water as needed salt and pepper as needed



1 Combine the cooked meat, raisins, Pinon nuts, chocolate, bread crumbs and spices. Add enough water to cook as a thick sauce without scorching.
2 Grease the inside and outside of the turkey with the shortening. Stuff the turkey with the mixture and bake 25 minutes per pound at 350 degrees, approximately six hours.
