Couscous with Vegetarian Spaghetti Sauce

INGREDIENTS:
2 cups water 1-1/3 cups uncooked couscous 1 (28-oz) jar chunky vegetable spaghetti sauce
1 (15-oz) can garbanzo beans or chick peas, drained, rinsed 1/8 to 1/4 teaspoon crushed red pepper flakes 2 tablespoons chopped fresh parsley



1 In medium saucepan, bring water to a boil. Stir in couscous. Cover; remove from heat. Let stand 5 minutes or until liquid is absorbed.
2 Meanwhile, in medium saucepan, combine spaghetti sauce, beans and red pepper flakes. Cook over medium heat for 5 to 7 minutes or until thorughly heated, stirring occasionally.
3 Fluff couscous with fork. Serve sauce mixture over couscous; sprinkle with parsley. If desired, sprinkle with shredded frsh Parmesan cheese.
