| 3 cups piki crumbs | 2 cups boiling water | 1/3 cup blue cornmeal |

| 1 | Add piki crumbs to boiling water and continue to boil, over moderate heat, until piki is tender-about five minutes. Stir frequently. |
| 2 | Add cornmeal slowly, stirring to mix well. |
| 3 | Cook for five more minutes, stirring constantly to prevent burning. |
| 4 | Add sugar and continue to cook, stirring constantly, for ten more minutes, or until pudding becomes very thick. |
| 5 | Serve with greens, stews, meats, or with stewed peaches. |
