INGREDIENTS:
3 cups piki crumbs 2 cups boiling water 1/3 cup blue cornmeal
2 tablespoons sugar



1 Add piki crumbs to boiling water and continue to boil, over moderate heat, until piki is tender-about five minutes. Stir frequently.
2 Add cornmeal slowly, stirring to mix well.
3 Cook for five more minutes, stirring constantly to prevent burning.
4 Add sugar and continue to cook, stirring constantly, for ten more minutes, or until pudding becomes very thick.
5 Serve with greens, stews, meats, or with stewed peaches.
