| INGREDIENTS: | ||
| 1/4 cup cooking oil | 1 large onion chopped fine | 3 Tbsp chopped green chilli |
| 2 large ripe tomatoes thinly sliced | 1 tsp salt | 2 tsp red chilli powder |
| 1 large eggplant cut into 1/2" squares | ||
| 1 | Fry the onion until soft. Add all other ingredients and cook until done over a medium fire, approximately 30 minutes. |
| 2 | 6 squashes may be substituted for eggplant, if desired. |
| 3 | 1 cup of cheese may be spread over the hot dish just before serving, if desired. |
