Berenjena Ranchera (Eggplant Ranch Style)

INGREDIENTS:
1/4 cup cooking oil 1 large onion chopped fine 3 Tbsp chopped green chilli
2 large ripe tomatoes thinly sliced 1 tsp salt 2 tsp red chilli powder
1 large eggplant cut into 1/2" squares



1 Fry the onion until soft. Add all other ingredients and cook until done over a medium fire, approximately 30 minutes.
2 6 squashes may be substituted for eggplant, if desired.
3 1 cup of cheese may be spread over the hot dish just before serving, if desired.
