| INGREDIENTS: | ||
| 1/4 cup flour | 1/2 tsp salt | 1/4 tsp pepper |
| 1/2 tsp poultry seasoning | 1/4 tsp sage | 2 muskrat, cut into service-size pieces |
| bacon fat, butter or margarine | 1/2 cup water | 2 tbsp finely chopped celery |
| 2 tbsp finely chopped onion | ||
| 1 | Mix flour, salt, pepper, poultry seasoning and sage. Rub thoroughly into muskrat pieces, making sure pieces are thoroughly coated. Fry in bacon fat, butter or margarine. Add the 1/2 cup of water to frying pan and cook slowly for about 5 minutes. Add celery and onions. Stir and cook for 1/2 hour or until done. |
