Fried Muskrat

INGREDIENTS:
1/4 cup flour 1/2 tsp salt 1/4 tsp pepper
1/2 tsp poultry seasoning 1/4 tsp sage 2 muskrat, cut into service-size pieces
bacon fat, butter or margarine 1/2 cup water 2 tbsp finely chopped celery
2 tbsp finely chopped onion



1 Mix flour, salt, pepper, poultry seasoning and sage. Rub thoroughly into muskrat pieces, making sure pieces are thoroughly coated. Fry in bacon fat, butter or margarine. Add the 1/2 cup of water to frying pan and cook slowly for about 5 minutes. Add celery and onions. Stir and cook for 1/2 hour or until done.
