Duck Mango and Goat Cheese Sandwiches |

| INGREDIENTS: | ||
| breast meat from 3 roast half ducks | 24 slices ciabatta, sourdough, focaccia or other sliced bread | sweet hot mustard |
| 6 slices red onion, sliced very thin | 9 oz goat cheese, crumbled | 12 slices fresh mango, 1/4 inch thick, cut to fit bread |
| 12 sprigs watercress | ||
| 1 | Thaw roast half duck in the refrigerator overnight, if frozen. |
| 2 | Preheat oven to 375 F. |
| 3 | Remove duck from bag and place in shallow baking dish. Bake for 15-20 minutes. |
| 4 | Thinly slice duck breasts. |
| 5 | Spread a very thin layer of mustard on bottom of the bread. Top each slice of bread with 1/2 slice of onion, serveral duck breast slices, 3/4 oz goat cheese, 1 slice mango and sprig of watercress. |
| 6 | Place top on sandwiches and serve. |
