Elegante (Squash and Chilli)

INGREDIENTS:
2 Tbsp shortening 6 yellow squash cubed 2 oz chopped green chilli
1/2 cup yellow corn 1 small onion sliced thin 1 large tomato chopped
1/8 tsp garlic powder 1/8 tsp mint 1 tsp salt
1 cup milk



1 Fry the corn until brown. Hold the milk. Add all other ingredients and cook covered about 10 minutes over a medium fire. Add the milk. Reduce the heat to simmer. Simmer about 45 minutes. If desired, add grated yellow cheese.
