Crepes with Apple Filling (Nalesniki Nadziewane z Jablkami)

INGREDIENTS:
3 eggs 1-1/2 cups milk 1 cup flour
3 tablespoons sugar salt to taste 2 tablespoons olive oil
APPLE FILLING: 4 apples 3 tablespoons butter 3 tablespoons apple juice or cider



1 Combine all ingredients thoroughly, then allow to rest for 1 to 1-1/2 hours. Pour a small amount of batter onto a greased crepe pan, tilting to allow batter to spread evenly. Brown lightly, remove and repeat until batter is used up. Fill crepes with Apple Filling.
2 APPLE FILLING: Combine ingredients and simmer over low flame for about 20 minutes.
