Eggs Poached in Chilli

INGREDIENTS:
3/4 cup tomato juice 2 oz chopped green chilli 1 small onion, diced
1.8 tsp garlic powder 1 tsp salt pinch of oregano, mint & coriander
2 eggs



1 Combine the ingredients, except the eggs. Cook until the onions are tender. Mash. Reduce heat to simmer. Gently break in two eggs. Cover. Simmer until whites are solid.
2 Serve the eggs in a small bowl with the sauce poured over them. Wheat tortillas should be served with the eggs.
