| INGREDIENTS: | ||
| 3/4 cup tomato juice | 2 oz chopped green chilli | 1 small onion, diced |
| 1.8 tsp garlic powder | 1 tsp salt | pinch of oregano, mint & coriander |
| 2 eggs | ||
| 1 | Combine the ingredients, except the eggs. Cook until the onions are tender. Mash. Reduce heat to simmer. Gently break in two eggs. Cover. Simmer until whites are solid. |
| 2 | Serve the eggs in a small bowl with the sauce poured over them. Wheat tortillas should be served with the eggs. |
