| 2 cups blue cornmeal | 1 teaspooon salt | 2 teaspoons baking powder |
| 2 beaten eggs | 1-1/4 cups milk | 1 small onion, chopped fine |

| 1 | Measure cornmeal, salt, and baking powder into a mixing bowl. |
| 2 | Stir milk into beaten eggs and gradually add to cornmeal mixture. |
| 3 | Add chopped onions to cornmeal and mix well. |
| 4 | Drop by teaspoonfuls into 1-1/2 inches of very hot shortening. |
| 5 | Fry hush puppies until golden brown, turning to brown all sides. |
