INGREDIENTS:
2 cups blue cornmeal 1 teaspooon salt 2 teaspoons baking powder
2 beaten eggs 1-1/4 cups milk 1 small onion, chopped fine
shortening



1 Measure cornmeal, salt, and baking powder into a mixing bowl.
2 Stir milk into beaten eggs and gradually add to cornmeal mixture.
3 Add chopped onions to cornmeal and mix well.
4 Drop by teaspoonfuls into 1-1/2 inches of very hot shortening.
5 Fry hush puppies until golden brown, turning to brown all sides.
