| INGREDIENTS: | ||
| 1 cup all purpose flour | 16 ounces (about) Halloumi cheese, drained, cut crosswise into eight 3x1-1/4 inch rectangles | 6 tablespoons olive oil, divided |
| 4 tablespoons ouzo (unsweetened anise liqueur) or other anise-flavored liqueur, divided | 1 lemon, halved, seeded | assorted olives |

| 1 | Preheat oven to 300 F. Mound flour on large plate. Rinse each slice of cheese with cold water. Dip wet cheese into flour, coating all sides; place on foil. |
| 2 | Heat 3 tablespoons oil in large skillet over medium-high heat. Add 8 slices cheese. Saute until brown, about 3 minutes per side. Add 2 tablespoons ouzo; light with long-handled match, standing back until flames subside. Squeeze some lemon juice over. Transfer to rimmed baking sheet; place in oven. Wipe out skillet; repeat with remaining oil, cheese, ouzo, and lemon. |
