Super Meat Sauce

INGREDIENTS:
4 slices bacon, diced 3 ounces butter or good olive oil 1 medium size Spanish or red onion, chopped
5 fresh mushrooms, chopped 4 cloves garlic, chopped 8 ounces ground pork (lean shoulder or other part)
8 ounces ground lean chuck 8 ounces Sprite 1-1/2 pound can tomato puree
4 ounce can tomato paste 1/2 gallon whole tomatoes (#5 can) 1 quart chicken or beef stock (or tomato juice)
1/2 cup chopped parsley 1 stalk celery, chopped 2 bay leaves
pinch of thyme leaves pinch of rosemary leaves pinch of oregano
pinch of grated nutmeg 1 clove a few leaves of fresh basil or salt and pepper
parsley, for garnish



1 In a saucepan, cook the bacon. Add the butter or oil and onions. When lightly browned, add the mushrooms and garlic, the the pork and beef. After a few minutes add the Sprite and then the rest of spices (except the parsley), tomatoes and liquids.
2 Cook slowly for about 2 hours. Before serving, remove the clove and add the chopped parsley. Garnish with additional parsley.
