Baked Ham and Sweet Potatoes

INGREDIENTS:
1 smoked ham slice (about 1 pound), cut about 1 inch thick whole cloves 2 tablespoons brown sugar
2 tablespoons fine dry bread crumbs 1 teaspoon grated orange peel 1/2 teaspoon dry mustard
1 orange 3/4 cup orange juice maraschino cherries, halved
parsley sprigs sliced cooked sweet potatoes



1 Place the ham slice in an 11x7x2-inch baking dish. Insert the cloves in the ham slice at 1 inch intevals. In a bowl, mix the brown sugar, bread crumbs, orange peel, and dry mustard. Sprinkle over the ham. Rinse the orange and cut into 1/4-inch slices. Arrange the slices on top of the ham over the sugar mixture. Carefully pour the orange juice over the top of the ham slice.
2 Bake at 300 degrees about 40 minutes.
3 Garnish the ham with maraschino cherries, parsley, and sliced cooked sweet potatoes.
