| 1/2 pound sweet or hot Italian sausage (if you use links, remove casing) | 2 tablespoons olive oil | 6 large chicken drumsticks or thighs |
| 14 ounce can stewed tomatoes | 2/3 to 3/4 cup regular rice (uncooked) | 1 medium green pepper, cut into strips |
| 1 onion, sliced | 1 clove garlic, finely chopped | 1/2 teaspoon red pepper (not necessary if you use hot sausage) |

| 1 | In a 12-inch skillet over medium-high heat, brown the sausage and chicken in oil, stirring to break up the sausage. Add the stewed tomatoes (with their liquid), uncooked rice, green pepper, onion, garlic, salt, peppers, and Sprite. Turn the heat up to high and heat to boiling. Reduce the heat to low, cover and simmer, stirring occasionally, until the chicken and rice are tender and the liquid is absorbed (about 20 minutes). Gently stir in the frozen peas. Heat through. |
