Date Nut Loaf

INGREDIENTS:
1 package pitted dates, chopped 1 cup boiling water 1/2 cup Sprite
1/2 cup butter 1-1/2 cups sugar 1 teaspoon salt
2 eggs, beaten 3 cups flour 1 teaspoon baking soda
1 teaspoon cream of tartar 1 teaspoon vanilla 1 cup nuts, chopped



1 Sift together the flour, baking soda and cream of tartar and set aside. Place the dates in a large bowl and add the water, Sprite, butter, sugar and salt. Set aside until cool. Add the eggs to the dates and mix. Add the flour mixture and mix well. Stir in the vanilla and nuts. Pour into a greased and floured loaf pan. Bake at 325 degrees for 1 hour.
