Eggs with Celery Sauce |

| INGREDIENTS: | ||
| 12 hardboiled eggs, quartered lengthwise | 1/2 cup chopped celery | 1/4 cup chopped pimento |
| 1/3 cup saltine cracker crumbs | 2 ounces crumbled bleu cheese | 1/2 cup Sprite |
| 2-1/2 cups milk | 1 teaspoon salt | 6 tablespoons flour |
| 7 tablespoons margarine | ||
| 1 | Start by melting 6 tablespoons of margarine in a saucepan. Blend in flour and salt. Pour in Sprite and milk. Cook, stirring constantly, until thick. Add cheese, pimento and celery. Put the eggs in a 12x7-inch baking dish. Put sauce on top. Melt the remaining tablespoon of margarine and mix with the cracker crumbs. Sprinkle around edge of dish. |
