Red Chile Sauce #2

INGREDIENTS:
1 tablespoon olive oil 1 tablespoon garlic, finely chopped 2 cups New Mexico or Anaheim red chile powder
4 cups chicken stock 1 teaspoon salt



1 Heat the oil in a skillet over medium heat until hot but not smoking. Add the garlic and saute for 1 minute, stirring constantly. Add the red chile powder and stir constantly for 2 more minutes. This process cooks the red chile powder, giving it a nicer flavor.
2 Add the chicken stock and continue stirring until there are not more lumps left in the sauce. Decrease the heat to low, add the salt, and simmer for 10 minutes, until the sauce has reduced and thickened.
