| INGREDIENTS: | ||
| 4 thick pork chops (rib or loin) | 2 tablespoons butter | 1/2 cup cider |
| 1 teaspoon mustard | salt and pepper | 1/2 cup heavy cream |
| 2 teaspoons finely chopped parsley or chives | ||
| 1 | In a large skillet fry the chops very slowly in the butter until brown on both sides. This should take 30 to 40 minutes, keeping the pan covered. Add cider and cook 10 minutes longer if necessary. This depends on the thickness of the chops. Chops should be tender. Pork needs slow, long cooking. |
| 2 | Remove chops to heated platter and keep warm. Add seasonings and cream to liquid in fry pan; heat up. Pour over chops, garnish with parsley or chives, and serve at once. |
