| INGREDIENTS: | ||
| 2 cups beef consomme | 1 tart apple, quartered and cored, unpeeled | 1 onion, quartered |
| 1-1/2 teaspoons herb mix, cinnamon, or favorite spice | 4 tablespoons apple cider | 1 cup light cream or half and half |
| 1 | Combine consomme, apple, onion, and seasonings in top of double boiler. Cover tightly and cook at 350 F for 2 minutes until apple is soft. Strain, discard pulp, and return to double boiler. |
| 2 | When ready to serve, add cider and cream. Serve hot. |
