Apple Soup

INGREDIENTS:
2 cups beef consomme 1 tart apple, quartered and cored, unpeeled 1 onion, quartered
1-1/2 teaspoons herb mix, cinnamon, or favorite spice 4 tablespoons apple cider 1 cup light cream or half and half



1 Combine consomme, apple, onion, and seasonings in top of double boiler. Cover tightly and cook at 350 F for 2 minutes until apple is soft. Strain, discard pulp, and return to double boiler.
2 When ready to serve, add cider and cream. Serve hot.
