| INGREDIENTS: | ||
| 1/2 cup butter or vegetable oil | 1 large yellow onion, diced | 1 tablespoon peeled and grated fresh ginger |
| 1 tablespoon minced garlic | 2 tomatoes, diced | 1 pound (500g) lean ground beef |
| salt | 2 to 3 eggs, beaten | 1 tablespoon ground turmeric |
| 1 tablespoon butter mixed with 1 tablespoon minced fresh parsley | parsley sprigs, for garnish | 1-1/2 cups grated aged goat cheese (optional) |
| 1 | Heat the butter in a large pan and saute the onion until golden. Stir in the ginger, garlic, tomatoes, and beef; season with salt. Cook on low heat for 15 to 20 minutes, stirring regularly to prevent burning. Combine the eggs with the mixture in the pan, and cook for 10 minutes. Remove from the heat. Mix in the turmeric and seasoned butter, and top with the parsley and cheese. |
